Serves : 3 Bowls
Ingredients:
- Spaghetti: 200 gm
- Coconut Milk (Thick): 2 Cup
- Chickpea flour (Besan) : 1 tbs
- Sweet Corn : 1/2 Cup
- Beans chopped 1 inch: 1/2 Cup
- Capsicum square cut : 1/4 Cup
- Broccoli chopped: 1/2 Cup
- Carrot Square Chops: 1/2 Cup
- Fresh Red Chilies : 3
- Onion :1 no
- Garlic Cloves : 4 nos
- Ginger : 1/2 Inch
- Lemon Grass Stick : 2
- White Peeper Powder : 1 tsp
- Cumin Powder :1 tsp
- Coriander Powder :1 tsp
- Haldi: 1/2 tsp
- Red Chili Powder :1/2 tsp
- Salt as per taste
- Cooking Oil
- Water
Toppings:
- Lemon : 2 nos
- Coriander : 1/4 Cup
- Roasted Peanuts: 1 Cup
- Green Chilies finely chopped : 3
- Spring Onions : 1/2 Cup
- Fried Onions: 1/2 Cup
Procedure:
We can divide Procedure in Three steps.
Cooking Base :
- Take Around 1 litter Water in utensil.
- Add some salt and. 1/2 tbs oil in it, allow it to boil.
- As water Start boiling add Spaghetti boil for 5 mins .
- Now turn off gas, and strain Spaghetti and rinse it thoroughly by using cold water.
- Base is ready.
Vegetable Coconut Curry :
- Heat 1/2 tbs Oil in Pan add chopped Onion, Garlic, Ginger, 1 Green chilly and lemon grass and saute it till become Golden Brown.
- Add little Cumin powder, Coriander Powder, Haldi and Red Chilly Powder in it.
- Turn off gas and Grind this Mixture and make fine paste
- In other Pan Heat 1/2 tbs Oil.
- Add Carrots, Red chili, Beans, Sweet Corn, Broccoli and Capsicum and toss it properly.
- Add Ground Paste in it, turn heat on high flame and saute it.
- In separate bowl take Besan , White pepper Powder and Coconut milk and Mix it uniformly to avoid lump formation.
- Turn off gas
- Add Coconut Milk Mixture in pan and stir it gently.
- Turn Gas ON on Medium flame.
- Add 3 to 4 Cups of Water in it.
- Allow it to boil for 5 to 7 mins.
- Vegetable Coconut Curry is Ready.
- Take Spaghetti in Bowl.
- Pour Vegetable Coconut curry on it.
- Add some toppings like Roasted Peanuts, Spring Onion, fried Onions, Green chilies and Coriander.
- Enhance taste by squeezing lemon on it.
Note:
You can make chicken or fish khow suey by add adding chicken or fish pieces in place of Vegetables.
Add More Toppings like Pineapple, Pomegranate, Parsley, Asparagus.
