Being Mother of 7 year Kid, I am always worried for his diet, because same as me, my son is big foodie, and love junk food ha ha ha .............I know it sounds funny.
Making junk food healthy is a big responsibility. Now a days I saw many kids who don't like Vegetables.
We can make them eat Boring Vegetables (Kids language) with some Cheese, Pastas, Macaroni, Noodles.
So specially for kids and ya ya for elders too......
Healthy evening meal : Cheesy Macaroni With loads of Veggies
Ingredients:
Macaroni : 200 gms
Butter or Margarin : 1 tbs
Refined flour: 1/2 tbs
Milk : 1 cup
Cheese grated : 1/2 cup
Oregano : 1 tsp
Basil : 1/2 tsp
Red chili flakes : 1/2 tsp
Salt : as per taste
Vegetables Mixed : 11/2 cup
( Broccoli, Corn, Beans,Carrot, Capsicum)
Garlic chopped : 1/2 tbs.
Tomato chopped deseeded : 1/2 cup
Procedure:
Serve hot with Tomato sauce, Kids will surely love this.
NOTE: Vegetables you can add as per Your choice.

- Boil Macaroni and add little salt and oil, boil till it is semi cooked.
- Take 1/2 tbs Butter, and toss all Veggies for 1 mins take it out in plate.
- Take remaining butter 1/2 tbs add finely chopped Garlic ,Refined flour.
- Saute it til become golden and add Milk and stir it till it becomes thick no lumps should form.
- Add Oregano, Basil and Chili flakes. ( Here I used fresh Oregano and Basil but if not available u can use dry herbs)
- Add 1/2 cheese in it,
- Last add sauteed vegetables and chopped deseeded Tomato, boiled Macaroni and little salt according to taste, stir it gently.
- Add cheese on top and cover it for 5 mins on low flame.
Yummy Macaroni is ready for satisfying your Tummy......
