So here I am writing easiest Rice recipe.
Maharashtrian Cuisine : Gobhi Masale Bhaat
Ingredients:
- Rice (Basmati) - 1 cup
- Water - 2 cup
- Bay leaf (Tej pan) - 2 nos
- Cinnamon stick (Dalchini) - 1 inch
- Cloves (Loung) - 4 nos
- Star Anise (Chakri Phool): 2 nos
- Black pepper(Kali Mirch) - 5 nos
- Black Cumin Seeds (Shah Jeera)- 1 tsp
- Green chilies (Hari Mirch) - 4 nos
- Mustard Seeds (Raai) - 1 tsp
- Clarified Butter (Ghee) - 1 tbs
- Cauliflower (Gobhi) - 200 gms
- Ginger Julienne : 1/2 tbs
- Green Peas(Mutter) - 1/2 cup
- Chopped Coriander(Hara Dhaniya) - 1/2 cup
- Grated coconut (Nariyal) - 1/2 cup
- Pomegranate (Anar Dane) - 1/2 cup
- Peanuts(Mungfali Dane) - 1/2 cup
- Lemon juice - 1 tbs
- Garam masala - 1 tbs
Procedure
- Cut Gobhi in medium size pieces, and put it in salt water.
- Wash Rice thoroughly by using water.
- Heat ghee in cooker allow it to melt.
- Add Black Cumin and Mustard Seeds.
- Once it start splitting, add Khada Masalas (Bay leaf,Cinnamon,Cloves,Star Anise and Black pepper) Saute it for 1 min.
- Add Ginger Julienne , Gobhi pieces, Green peas, Peanuts and Green chilies, saute it for 3 mins.
- Now add Rice in it and saute until it become golden brown.
- Sprinkle Garam Masala.
- Add Water, Salt and Lemon juice in it.
- Cover it with lid, after 2 whistle turn off gas and wait til pressure releases.
- Gobhi Masale Bhaat is ready.
- Garnish it with Coriander, Coconut and Pomegranate.
- Add 1 tsp Ghee and Squeeze lemon for enhancing taste.
- Serve it with any Raita or Plain Yogurt.
Notes: Keep Gobhi pieces in salted water for removing yellowness.
Stirs Rice with soft hand, otherwise rice grains will break.
In place of Gobhi You can use Tondli for making Tondali Bhaat.
