Since morning feeling lazy, don't wanna make some thing which requires more efforts.
Numbers of things came in my mind, Shall I make Instant Noodles or French fries or just have an Apple. but don't wanna eat Fried and Junk food.
APPLE! Nooooooo , not in evening with tea bad choice, what to do with tongue which need something savory.
After so many thoughts,which can satisfy my mind which was saying no to unhealthy food and tongue which like savory.
Here is the result...................................................................
Homemade Instant Khaman
Servings: 30 pcs
Preparation Time: 10 Mins
Cooking Time: 10 to 12 Mins
Ingredients:
- Chickpea Flour (Besan): 2 cups
- Semolina (Rawa): 1/2 cup
- Yogurt: 1 cup
- Citric Acid:1/2 tsp
- Eno : 1 pkt
- Sugar : 1 Serving Spoon
- Haldi : 1 tsp
- Curry Leaves : 10 nos
- Green Chilly : 8
- Mustard Seeds (Rai): 2 tsp
- Sesame seeds: 1 tsp
- Hing : 1/2 tsp
- Coconut scrapped : 1/4 cup
- Finely chopped Coriander : 1/4 cup
- Lemon :1
- Oil
- Salt as per taste
Procedure:
- Mix Besan, Rawa, Haldi and Citric acid.
- Add Yogurt,Water and Salt in Mixture and make thick batter and stir it uniformly to avoid lump formation.
- Whisk Batter in one direction to incorporate air in it by this batter will become light.
- Now let this Mixture rest for minimum 5 to 7 mins .(You can keep longer if you have time ;))
- Whisk Mixture thrice again and Add Eno (Any Fruit Salt) in Mixture batter will become fluffy.
- Greece Khaman Plates and put batter in plates and simultaneously boil water in steamer.
- Place Khaman stand in Steamer( Pressure Cooker can be used).
- Allow it to steam for 10 to 12 mins on high flame.
- Heat Oil in Pan , add Mustard Seeds, Sesame Seeds, Hing,Curry Leaves and Green Chilies.
- Turn off flame add little water(1/4 cup) in pan.
- Squeeze lemon in Baghar and add Sugar in it and switch on flame and heat this mixture for 1 min.
- Takeout Khaman Stand and cut Khaman in square pieces.
- Spread Curry Leaves Baghar on it uniformly.
- Garnish with Coriander and Scraped Coconut.
- Take out Square Khaman Cuts in Serving plate and Enjoy with Green Chutny and Tea.
Note:
- You can make Khaman in Microwave also, just put batter in microwave safe dish and keep it in microwave for 5 Mins.
- Remove Pressure if using Pressure Cooker.
- Consistency of batter and Whisking is the important key of spongy Khaman .
