Mixed Herb Grilled Chicken |
Sharing one of my favorite Chicken recipe. Simple but full of flavor.
Cooking chicken breast is a double edged sword. If we consider whole chicken bird as a garage, chicken breast is the Rolls Royce. Handle with care. Margin for error between under cooked , overcooked and Perfectly cooked is minimum. No body wants under cooked and over cooked becomes rubbery.
Follow my recipe to get juicy tender and well-done chicken every time.
Few kitchen tools are required for good results.
1. Meat Tenderizer
2. Good Quality Grill Pan
Let's get it started
Ingredients
2. Basil leaves a handful
3. Mint leaves finely chopped
4. Dill leaves roughly chopped 1 tea sp
5. Garlic powder 2 tea sp
6. Olive Oil 2 tea spoon
7. Salt 2 serving spoon
8. Sugar 1 serving spoon
9. 1 fresh lemon, get a big one
10. Black pepper
11. white pepper
12. Water 1 ltr
Procedure
We divide this in two parts preparation and cooking
We have to start with making Brine.
1.To make simple home made brine take 1 ltr water in a bowl
2. Add 2 serving spoons of salt.
3. Add 1 serving spoon of Sugar.
4. Stir to dissolve sugar and salt and taste few drops. It should be salty with mild sweet flavor.
5. Add some finely chopped basil and mint. It is optional.
6. Take both chicken breast portions and dip it in brine water. Let it rest there for at-least couple of hrs.
Now After couple of hrs take out both portion. let extra brine fall out of it.
This is the the time to use some muscle power
7.Take plastic sheet place one chicken breast on it in such a way that its shiny side is facing up. Now cover chicken with another plastic sheet. Now we have to tenderize chicken by using meat tenderizer. Use the flat side of tenderizer. Start pounding chicken breast slowly. Go from meaty part to lean part. we need nearly half inch thick chicken breast after flattening.
Note: If you don't have tenderizer you can use any heavy flat base utensil.
8.Take chicken breast on your chopping board. Sprinkle garlic powder, black pepper, white pepper , and fresh lemon zest on both sides. Apply some olive oil on both side. Sprinkle chopped mint leaves, dill leaves and basil leaves on both sides of chicken breast and give it a good massage. Rub all spices , let the flavors get inside.
Let seasoned chicken rest for some 20 min. In the mean while make any dip or chutney you want.
9.Take your grill pan on high flame. Chef's Tip: Make it really very very hot. No need to add any oil.
10. Place seasoned chicken slowly on grill and press it once on top, so that we have grill pattern while cooking. Cover pan with lid. Cook on medium flame for 2 to 2.5 min.
11. Flip the chicken and grill it on another side for couple of min on medium flame.
12. Turn burner off and let chicken rest on it for some 30 sec. Brush some olive oil on top.
13. Place grilled chicken on chopping board. Dress it with some lemon juice. Let it rest for another 1 min.
14. Serve it as a whole or in pieces. With glass of Shiraz or Cabernet Sauvignon
