Bhindi is one of my favorite vegetable.
Believe me it came out amazing......
It was Spicy, Sweet, Sour and Nutty
Nutty Spicy Bharwa Bhindi
Ingredients:
- Okra(Bhindi) : 1 Kg
- Garlic Cloves: 4 nos
- Chickpea Flour (Besan): 2 tbs
- Sesame Seeds(Tilli): 1.5 tbs
- Roasted Peanut Powder(Mungfali): 2 tbs
- Fennel Seeds(Saunf): 1 tsp
- Cumin (Jeera): 1 tsp
- Mustard Seeds(Raai): 1 tsp
- Coriander Powder (Dhana Pud): 1 tbs
- Dry Mango Powder(Amchur) : 3 tsp
- Garam Masala: 1.5 tsp
- Dry Ginger Powder(Sunth): 1 tsp
- Asafoetida (Hing): 1/2 tsp
- Red Chilly Powder : As per taste
- Salt: As per taste
- Sugar: As per taste
- Grated Coconut: 1/4 th Cup
- Finely Chopped Coriander: 1/4 th Cup
- Cooking Oil: 2 tbs
Procedure:
Stuffing:
- Heat 1 tbs Oil in Pan.
- Add Jeera and Raai allow it to split.
- Add finely chopped Garlic and saute it til it become golden brown.
- Add Sesame Seeds and Asafoetida wait til become yellow.
- Sprinkle Besan in Pan and roast it on low flame.
- Add Roasted Peanut Powder and saute around 1 min.
- Add all Masalas ( Serial No 9,10,11,12 and 14) and saute it again.
- last add fine Sugar and Salt as per taste.
- Stuffing is ready, keep it aside and allow it to cool.
Bharva Bhindi:
- Gently fill Stuffing in Bhindi.
- Heat 1 tbs of Oil in Pan.
- Now place all stuffed Bhindies in Pan.
- Add little Haldi and Salt.
- Allow it to cook on low flame around 10 mins.
- Gently Toss stuffed Bhindies 2 to 3 times.
- Garnish with Coconut and Coriander .
- Serve with Hot Parathas, Chapatis or Tandoori Roti with Onion Tomato Salad and Papad .
