Chicken Dum Biryani

Chicken biryani that is easy to make, tastes great and is healthy too? 

Chicken Biryani is called the ‘Pakki-Biryani’, where the chicken and the rice are cooked separately and then combined in the final step. The prefect accompaniment for  Biryani Mint Raita.

Chicken Dum Biryani

Cooking Time: 1 hr
Servings: 4 person

Ingredients:
  1. Basmati Rice : 2 cups
  2. Boneless Chicken : 250 gms
  3. Chicken Leg piece : 4 nos 
  4. Onion: 2 nos
  5. Ginger Garlic paste: 2 tbs
  6. Mint Leaves: 1/2 Bowl
  7. Milk: 1/2 cup
  8. Saffron (Kesar) : 10 strands
  9. Yogurt: 1.5 cup
  10. Mustard Oil : 1 tbs
  11. Lemon Juice: 2 tbs
  12. Green Chilly: 5 to 6 nos
  13. Star Anise (Chakri Phool): 3 nos
  14. Green Cardamon (Elaychi) : 4 nos
  15. Badi Elaychi: 1 no
  16. Bay Leaves (Tej Paan): 2 nos
  17. Cinnamon Sticks (dalchini): 2 (1 inch) nos
  18. Cloves: 4 nos
  19. Black Peppers : 4 nos
  20. Red Chili Powder : as per taste
  21. Garam Masala: 2 tsp
  22. Turmeric powder: 1 tsp
  23. Tandoori Chicken Masala (Everest): 1 tsp
  24. Salt: as per taste
  25. Ghee: 2 tbs
  26. Oil: 1 tbs
  27. Kevda Water: 2 tbs
  28. Chopped Coriander: 1/4 CUP
Procedure:





  1. Wash and Soak Basmati Rice for 20 mins.
  2. Clean Chicken and cut in to 1 inch pieces and make horizontal cuts on Chicken pieces. 
  3. Take Yogurt in a bowl, add Ginger Garlic Paste, Red Chilly powder, turmeric powder, Garam Masala, Tandoori Chicken Masala, mustard oil, lemon juice and Salt. and mix all ingredients properly.
  4. Marinate Chicken pieces in Yogurt mix and rub it gently and allow it to rest for 30 mins.
  5. Take milk in a cup and add Kesar in it and microwave it for 50 secs.
  6. Cut Onion in to long thin slices.
  7. Heat oil in pan and saute Onion slices til it become brown and keep it on Kitchen towel for removing excess oil.Keep it aside.
  8. Heat 1 tbs Ghee in pan add Jeera, Dalchini, Chakri phool, Tejpatta, Elaychi, Laung and Black pepper in it  and saute it for 1 min.
  9. Add Soaked Rice,Sauteed Khada Masala, Salt and 4 cups Water in Microwave casserole, and microwave it on high power for 7 mins and after that on medium power for 5 mins. keep it on rest.
  10. Heat 1 tbs ghee in pan add marinated chicken  and saute it for 5 mins on medium flame than add Yogurt mix in it and cover it allow it to cook for 5 to 7 mins on medium flame.
  11. Take a Big flat Utensil,keep aluminium foil in bottom of utensil.
  12. Make layer of Chicken Gravy than make layer of cooked rice (use 1/4 rice)on it , Sprinkle 1 tbs Milk Kesar, Kevda water, Brown onion, Mint leaves.
  13. Repeat step 12 twice, nos of layers will form. Cover it by using aluminum foil and keep weight on it.
  14. Heat Tawa and keep Big flat Utensil on it for indirect cooking. Allow it to cook on dum for 30 to 40 mins on low flame.
  15. Yummy Tendered Chicken Dum Biryani is ready, Garnish with Coriander leaves and Lemon slices and Serve Hot with Mint Raita.
