Dhaba is the name given to roadside restaurants in India. They are situated on highways and generally serve local cuisine India and Pakistan.
Really everyone enjoys Punjabi food, especially the heavily spiced on a wooden plank or, the cots were replaced by tables. The food is typically inexpensive and has a 'homemade' feel to it.
Really miss Dhaba Food, we used to go Mamaji ka dhabba, CKD, Reliance wala Dhaba and so many.
Today I made lunch Dhaba style.
Dhaba Style Paneer Bhindi Masala:
Ingredients:
- Okra (Bhindi): 500 gms
- Onion : 2 nos
- Capsicum: 1 nos
- Tomato : 1 nos
- Paneer : 100 gms
- Garlic and Ginger paste: 1 tbs
- Green Chilies: 4 nos
- Cumin (Jeera) : 1 tsp
- Mustard seeds (Raai) : 1 tsp
- Asafoetida (Hing): 1 tsp
- Coriander powder : 1 tbs
- Garam Masala: 1 tsp
- Turmeric powder : 1 tsp
- Red Chilly Powder : as per taste
- Dry Mango Powder : 1 tsp
- Dry Red Chilly : 2 nos
- Cooking Oil : 2 tbs
- Coriander Chopped : 1 tbs
- Salt: as per taste
- Sugar: 1 pinch
Procedure:
- Wash and dry Bhindi and cut it 1 inch long.
- Scoop Pulp from Tomato and cut in square shape.
- Cut Paneer in 1 inch cubes.
- Cut Onion and Capsicum in Square shape.
- Heat 2 tbs oil in a pan and shallow fry Bhindi and Paneer, keep them aside on kitchen towel for removing excess oil.
- Take out 0.5 tbs oil from pan and add Jeera, Raai, Hing and Dry Red Chilly in it saute it.
- When it start to split add Onion and green Chillies in it and saute til onion turn golden brown.
- Add Ginger Garlic paste and saute it for 2 mins .
- Add Capsicum and Tomato and toss it on high flame so that crunchiness remain.
- Add fried fried Bhindi and Paneer in it and toss it on high flame.
- At last add all Masalas (11,12,13,14 and 15) and salt and sugar and toss it for 5 mins on high flame.
- Garnish with Chopped Coriander and Serve with any bread.
I Served hot and spicy Bhindi masala with Laccha Paratha, Aam ka Achar (Home made), Kakdi ka Raita and Roasted Panjabi Masala Papad.
