Mouth Melting Paan Kulfi (Zero added Sugar)

Today I am sharing delicious recipe of Mouth Melting Paan Kulfi (Zero Sugar),it is an Indian ice cream which is made by reducing milk till it gets thick, an unique flavor of Paan and Gulkand added to it, which tastes refreshing.Zero added Sugar is because Milk itself contain sugar. 

must try for all those who love their 'Meetha Paan', this one is a sheer delight for the senses. 

Mouth Melting Paan Kulfi (Zero added Sugar)






Serves: 6 Kulfies
Preparation Time: 10 Minutes
Cooking Time: 1.5 to 2 hrs
Rest Time (Freezing Time): 8 hrs

Ingredients:
  1. Full Cream Milk: 1.5 lit
  2. Unsweetened Condense Milk : 1 tin
  3. Cardamon Powder : 1 tsp
  4. Nutmeg Powder: 1/2 tsp
  5. Betel leaf (Paan): 4 No
  6. Fennel Seeds : 1 tbs
  7. Gulkand : 2 tbs
  8. Almond: 6 nos
  9. Cashew nut : 6 nos
Procedure:
  1. Boil 1 lit milk in a heavy bottom pan. Keep stirring it after every 2 minutes so that it doesn't stick to the bottom.
  2. After around 30 minutes, the milk would have reduced quite a bit. At this point add condense milk and stir it continuously til it become like Rabdi (Reduce half) , now turn gas off, allow it to cool completely.
  3. In other pan heat remaining 500 ml milk.
  4. When it starts Boiling add betel leaves in it for 1 min on low flame.
  5. Roast fennel seeds and grind it make coarse powder.
  6. Strain out betel leaf from milk and grind it with roasted fennel powder, Cardamon powder and nut meg powder thick paste will form.
  7. Add this thick paste in to 500 ml milk and boil it so that all flavor is extracted in Milk and allow it to cool.
  8. Roast both almond and cashew nut and crush it coarsely in mixer.
  9. Now add flavored milk (without straining), Gulkand and Roasted crushed Nuts in Rabdi and mix it uniformly.
  10. Pour the mixture in kulfi moulds and freeze overnight or until firm.

Note: If Rabdi is very thick than you can add little cold milk for required consistency.
